1 oz. mezcal
1 oz. Torani Ruby Red Grapefruit Syrup
1 dash Scrappy's cardamon bitters*
sparkling wine, chilled
Combine all ingredients except sparkling wine, and stir with ice. Strain into a chilled coupe and top with sparkling wine.
* Don't have Scrappy's cardamom bitters? Make your own by steeping 1 Tbsp. crushed cardamom into 8 oz. of high proof neutral spirit for 10 days and strain into a bottle.
