Galaxy Boba

Ingredients

1 oz Torani Puremade Galaxy Syrup

2 tbsps dark brown or muscovado sugar

¼ cup water

¾ cup tapioca flour

¼ cup milk

¾ cup brewed and chilled green tea

Instructions

Heat up the sugar and water together until dissolved then take off heat. Add 1 tbsp of the tapioca flour and mix it with the sugar mixture until it’s smooth. Heat the mixture up until it thickens, then mix in the rest of the tapioca flour until it becomes a dough. On a lightly floured surface (with tapioca flour), knead the dough until soft, then roll into long strands and cut/shape into small balls, add more tapioca flour to prevent them from sticking together Add the tapioca pearls to boiling water and cook for 20 minutes, then remove from heat and let it sit for 20 minutes. Add the cooked tapioca pearls, brewed and chilled tea, milk, and Torani Puremade Galaxy Syrup into a cup and enjoy! Recipe by Michael Ligier, @michaelligier.
