Dalgona coffee - what started as a Tik Tok trend has now evolved into the internet’s most popular drink. A fluffy beverage that has taken over social feeds, the end result is a multilayered drink that is as photogenic as it is tasty.
 
Before we dive into flavor, let's first discuss the science behind the Dalgona.  You're probably wondering - what gives the Dalgona its whipped texture? First, you need to know about “surfactants.”  Surfactants (surface-active agent) is a substance which tends to reduce the surface tension of a liquid in which it is dissolved.  When you are whipping a liquid into a foam, you are essentially incorporating air into the liquid, in the form of bubbles.  Surfactants can help create smaller bubbles by lowering the surface tension of the liquid it’s dissolved in and therefore stabilizes the foam.  
 
Now here’s the part you all have been waiting for - Instant Coffee contains naturally occurring surfactants! Now for the sugar.  While the surfactants in the instant coffee help the formation of foam, they aren’t strong enough to maintain the foam for long periods of time.  This is where the sugar component plays a crucial role.  The sugar increases the viscosity of the liquid and creates a syrup (i.e. a simple syrup or a Torani Syrup.)  This thick syrup is what helps to further stabilize the instant coffee foam and create the photogenic drink that you know as Dalgona coffee. 
 
Similar to surfactants, Matcha contains saponins which also reduces surface tension in liquids which allows us to make the Matcha Dalgona.

Ingredients
  • 2 Tbsp Torani Syrup
  • 2 Tbsp instant coffee
  • 2 Tbsp hot water
  • 1 cup chilled almond milk
Instructions: Whisk together equal parts instant coffee, Torani syrup, and hot water for a few minutes until it becomes a thick foam. Pour over a glass of almond milk, stir and enjoy.

  • 1 cup chilled almond milk
